The sun has been shining around here and the weather has been in the 60's. I can't believe it. Grace and I spent a lot of time outside this week enjoying the beautiful weather. This meant that I didn't spend as much time cooking resulting in a lot of light and quick meals, perfect for the gorgeous spring weather.
Meal planning this week did prove to be quite the challenge. Grace has been trying to assert her control over things more and more, and last week her conquests included meal time. She refused to eat anything other than cheese and fruit. Something I was not happy about. My husband and I are not picky eaters in the least and are always up for trying a new recipe. A picky child simply is not going to survive in this household. In order to try and keep her pickiness at bay I attempted to pair some of Grace's favorite foods with other new flavors to create some fun combinations. I also tried hard to introduce different flavors and cuisines from around the world. Luckily this weeks meals were much more successful than last weeks, and Grace gobbled up almost every bite.
This was such an easy recipe to make, especially since I cheated and used a rotisserie chicken. My husband and I loved this amazing meal. Grace, on the other hand, threw her bowl on the floor, and allowed the puppy to eat her portion. I guess that is what I get for trying to keep Grace up past 6 pm so we could all eat together as a family.
One of our favorite meals this week. I love cooking fish because not only is it low in calories and loaded with vitamins, it also cooks really quickly. It was a great light meal for a wonderful warm March Day, and since Grace loves fish this was definitely devoured quickly.
Indian Butter Chicken with Brown Rice and Fresh Naan
My husband insists that he hates Indian food, but he could not get enough of this meal eating a ton of curry and naan. It was definitely Grace's favorite meal of the week, and Luca's too. However, that did not surprise me. She has always loved curry. The best part of this recipe is that it can be made in the crockpot and only takes 4 hours.
Grilled Pineapple Teriyaki Pork Chops with Toasted Coconut Rice Pilaf
This weekend we broke out the grill for the first time this spring and grilled up these delicious pork chops. Dinner would have been great if Anthony would not have broken out in hives halfway through. We have eaten this recipe before, and I still have no idea what might have caused his reaction. Given the large amount of ingredients it looks like I am going to have to be careful with my meal preparation for sometime until I can pinpoint what he may be allergic too. On the plus side Grace loved it, although she only wanted to eat the pineapple at first.
