A couple of nights ago, I needed a side dish to go with our tortilla crusted tilapia. I really wanted to make some Spanish rice, however, the recipe I normally make was just not going to cut it. It is labor intensive, and I had a child who was on the brink of a meltdown. So, I came up with this easy recipe. I simply put all of the ingredients in a skillet and let it simmer. How much easier could it be?
Luckily I had all of these ingrediants in my house, thank you Costco. I also added some green pepper, onion and corn I had frozen from my CSA last summer. Fresh produce always tastes better, but I was not in the mood for a grocery trip. Regardless, it still turned out tasty.
Easy Spanish Rice
Makes 4 Servings
INGREDIENTS:
1 cup uncooked brown rice
4 cups water
2 teaspoons Better than Bouillan Chicken Base (Reduced Sodium)
1 Tablespoon butter
2 ounces tomato paste
1 small onion chopped
1 teaspoon garlic salt
1/2 teaspoon cumin
Dash of cayenne
Pepper to taste
Optional:
1/2 green pepper, chopped
1/4 cup frozen corn
INSTRUCTIONS:
Combine all ingredients into a large skillet. Bring to boil. Cover and reduce heat to low. Simmer for 30-45 minutes. Remove from heat and let stand 10 minutes. Fluff with fork and serve.
